|Til Ka Gajak is made especially during the cold north Indian winter months since til (sesame) is believed to have warming properties. It is a specialty of northern India. This Gajak is a dry sweet, made of sesame seeds. It is cooked in sugar syrup and set in thin layers that can be stored for months.
The ingredients required are 1 cup sesame seeds roasted lightly, 1 cup jaggery, 3 tbsps ghee, 6-8 pods of cardamom seeds removed and ground into a powder and ½ cup water.
To make it, put the jaggery and water in a pan and melt to form thick syrup. Add the roasted sesame seeds to the syrup and mix well. Add the ghee and cardamom powder and mix well. After this, grease a flat plate with a little ghee and pour the jaggery-sesame mix on to it. Flatten and spread the mix over the plate. Allow it to harden and then break into pieces. Til ki Gajak is ready and you can store in an air-tight container.
